Turkey Black Bean Chili
This National Chili Month, we're cozying up to a healthy and hearty bowl of chili. Our recipe for Turkey Black Bean Chili is traditional in flavor--powder and cumin, crushed tomatoes, onion and bell pepper. Replacing the ground beef with lean ground turkey leans out this high-protein lunch or dinner. We use kidney and navy beans, but feel free to swap those for whatever you find in your kitchen cabinets.
Turkey Black Bean Chili
Our recipe for Turkey Black Bean Chili is traditional in flavor, but we lean it out a bit with lean ground turkey. We use kidney and navy beans, but you can swap those for whatever you find in your kitchen cabinets.
Serving size: 1 cup | Makes 6 servings
Ingredients
1 pound ground turkey, 93% lean |
2 tsp canola oil |
6 ounces diced bell pepper |
6 ounces diced onion |
2 TBSP minced garlic |
1-1/2 cups low sodium chicken stock |
1/4 tsp cayenne pepper |
2 TBSP chili powder |
2 tsp ground cumin |
1/2 tsp dried oregano |
2-1/2 tsp Worcestshire sauce |
2-1/3 cups canned crushed tomatoes |
1/4 tsp salt |
1/4 tsp black pepper |
1/3 cup black beans, drained and rinsed |
2 TBSP chopped fresh cilantro |
Brown rice, for serving (optional) |
Instructions
- In a pot, brown ground turkey in oil until cooked through.
- Add peppers, onions, and garlic and sauté until soft, about 10 minutes. Drain off excess fat.
- Add chicken stock, cayenne pepper, chili powder, cumin, oregano, Worcestershire sauce, crushed tomatoes, salt, and pepper. Simmer 20-30 minutes.
- Add beans and cook until beans are heated through.
- Add cilantro right before serving.
RD NOTE: Help keep the sodium in check: look for canned beans marked “Low Sodium”, “Less Salt” or “No Salt Added”.
