Tomato Herb Dressing
We know tomatoes are a great addition to salads, but how about making a simple dressing out of this late summer bounty? Use any type of tomato you have on hand and toss with mixed greens or a summer pasta salad with fresh mozzarella, olives and artichoke hearts.
Tomato Herb Dressing
Serving Size: 1 fl oz
Makes 8 servings
Ingredients
1/4 lb. tomatoes, fresh, diced |
1/4 cup red wine vinegar |
1/2 tsp. dijon mustard |
2-1/2 tsp. tomato paste |
1/8 tsp. crushed red pepper flakes |
1/4 tsp. salt |
1/8 tsp. black pepper |
1/4 cup extra virgin olive oil |
2-1/2 tsp. basil, fresh, chopped |
Instructions
1. In a blender combine tomatoes, red wine vinegar, dijon mustard, tomato paste, chili flake, salt and pepper.
2. While blender is running, drizzle in olive oil until emulsified.
3. Stir in chopped basil.
4. Store leftover dressing in an air-tight container in the refrigerator for up to 3 days.
