Gazpacho is a chilled tomato-based soup blended with seasonal vegetables -- and it's a perfect dish to serve in the summer heat. With roots originating in the southern region of the Iberian peninsula, this soup is incredibly popular throughout Spain and Portugal, but you can find variations throughout the world
