Red Cabbage Slaw, Dried Cherries

Red Cabbage Slaw, Dried Cherries is a colorful, crunchy, spicy way to fit in functional phytonutrients. Serve it aside BBQ chicken, on top of a burger, or mixed into a veg wedge. 

Serving size: 1/2 cup, Makes 6 servings


Ingredients

3 cups shredded red cabbage
1/2 cup thinly sliced red onion
1/4 cup dried cherries
1/4 teaspoon salt
1/4 teaspoon ground black pepper, divided
3 tablespoons sherry vinegar
1 teaspoon olive oil
1/4 teaspoon salt
1/2 teaspoon sugar
1 teaspoon lime juice
1 teaspoon minced jalapeno

Instructions

  1. In a large bowl, toss cabbage with onions, cherries, salt, and 1/8 teaspoon black pepper. Transfer to a colander and allow to sit about 2 hours until the cabbage bleeds out excess water.
  2. In a small bowl, combine vinegar, oil, salt, sugar, lime juice, jalapeno, and remaining 1/8 teaspoon pepper to create a dressing.
  3. Toss dressing with the cabbage. Chill.
