No-Bake Sunbutter, Dried Fruit, Pepita Energy Bites
Energy bites get their name from the satiating combination of complex carbohydrates and fiber, protein, and healthy fats. They're a staple for those times you reach for a snack because your stomach is audibly distraught and your brain is hangry. No-Bake Sunbutter, Dried Fruit, Pepita Energy Bites
We love this "quick hit" portable snack particularly in the summer months when we'd do just about anything to keep the oven turned off.
Serving size: 1 bite | Makes 15 servings
Ingredients
1/2 cup sunflower seed butter (sunbutter) |
1/4 cup semi-sweet chocolate chips |
1/4 cup brown sugar |
1/4 cup honey |
1/4 cup hulled pumpkin seeds (pepitas) |
1/2 cup dried cranberries |
1/2 cup old fashioned oats |
3/4 ounce puffed brown rice |
Instructions
- Melt sunbutter, chocolate chips, brown sugar and honey in a large microwave-safe bowl. Stir every 10-15 seconds to keep from burning.
- Add pepitas, cranberries, oats, and puffed rice and stir until evening mixed. Roll into 15 balls about 1-inch in diameter.
Nutrition per serving: 150 calories, 7.5 g fat, 1.5 g saturated fat, 30 mg sodium, 19 g carbohydrate, 1.5 g fiber, 14 g sugar, 3 g protein
