National School Lunch Week: Making Food Fun
When it comes to introducing new foods or new food preparations to students, we know that having taste tests is one of the best ways to engage our student communities. Through our monthly promotion, "Swavory," we set up monthly tastings for students and independent school communities to try sweet and savory versions of a seasonal vegetable or fruit.
A collaboration between our registered dietitians and culinary team, these promotions are always a huge hit at schools and are a great way to get creative at lunch time.
This week is National School Lunch Week and we're giving you an inside view on all things "Swavory" Sweet Potatoes!
The students at Wooster School in Connecticut took Swavory to the next level by conducting an independent survey on campus for which sweet potato tasted better. Check out the video below (and get the recipes!)
Savory: Roasted Sweet Potatoes with Smoked Paprika
Serves 4 portions with 6 potato wedges per portion
Ingredients
1/2 tsp ground black pepper |
2 tbsp canola oil |
1/8 tsp kosher salt |
3 sweet potatoes |
1/2 tsp smoked paprika |
Instructions
- Preheat the oven to 450 degrees.
- Wash potatoes with brush to remove any dirt. Slice each potato lengthwise into 8 wedges.
- Toss potato wedges with oil, salt, pepper, and paprika.
- Place the wedges in a single layer on a sheet pan. Roast in the oven until crisp and golden.
Sweet: Mashed Maple Sweet Potatoes
Serves 5 portions, 1/2 cup per portion
Ingredients
1 lb sweet potatoes |
1/2 tsp ground cinnamon |
1/2 tsp kosher salt |
1 1/2 tbsp maple syrup |
1/4 tsp ground black pepper |
Instructions
- Preheat the oven to 375 degrees.
- Wrap sweet potatoes with foil. Bake until very tender, about 60-90 minutes. Remove foil and peel sweet potatoes.
- Place hot sweet potato flesh in a standing mixer fitted with a paddle attachment.
- Add maple syrup, salt, pepper and cinnamon. Mix until smooth.
