National Breakfast Month: RD's Top Breakfast Picks for Dinner or Whenever
September is National Breakfast Month and we are celebrating by having breakfast, well, not for breakfast! We've asked a few our of Registered Dietitians for their top breakfast ideas they eat any time of day.
Tracy's Pick:

"So this might not be the most creative "breakfast for whenever" pick, but it truly is my go-to especially when it’s getting late and I have no time. Always choose a whole grain cereal: multigrain cheerios or frosted shredded wheat are two of my favorites. My milk of choice, unsweetened soy (similar nutrition profile to cow’s milk but lasts in my fridge a lot longer). Top with a sliced banana to round out the bowl… quick and satisfying!"

"I LOVE B4D – that’s what my kids call breakfast for dinner! I make a Dutch baby pancake a couple times a month and everyone in the fam loves it. Here's how! Preheat oven to 400F and put a rack on the lowest or second lowest shelf in the oven as the pancake needs space to rise. Melt 4T butter in a 10” iron skillet while oven preheats. In a large bowl, whisk together 6 eggs, 1 cup milk, 1 tbsp sugar, 1 tsp vanilla extract; then add 1 cup flour. Pour batter into hot the pan with butter in it and bake for 20 minutes. It puffs up really big on the edges and is super fun for the kids to watch - you can see my daughter admiring this recipe below! We enjoy it with a little powdered sugar on top, fruit on the side and some chicken sausage for protein."

"Probably my favorite breakfast "not at breakfast" is making breakfast tacos to have for lunch on weekends. I like to use whatever meat and veggies I have leftover from the week and make tacos with a few scrambled eggs and salsa. It's so easy to whip up, making it one of my go-to lunches on the weekend. It is also a great way to use up leftovers and prevents me from throwing away a lot of food."
Dana's Pick:
Dana Lemke, MS, RDN, LDN
"I love making toast just about any time of the day. It can be a great quick and easy snack or even a full meal. I start with a piece of whole grain bread, and then the toppings vary depending on what I am in the mood for. If I want something on the sweater side, I'll do plain Greek yogurt with a sprinkle of chia seeds, berries and a drizzle of honey, or peanut butter mixed with unsweetened cocoa powder topped with banana slices. If I am leaning savory, my go to is avocado toast. My favorite is mashed avocado with lime juice, black beans, cherry tomatoes, and a balsamic glaze drizzle. Another good savory option is cottage cheese, cucumber slices with a sprinkle of dill."
