Ingredients
FOR THE DRESSING |
3 tablespoons olive oil |
1 tablespoon lemon juice |
1/2 tablespoon honey |
1/8 teaspoon salt |
1/2 teaspoon ground pepper |
FOR THE SALAD |
8 ounces chopped kale, tough ribs removed |
4 ounces peeled orange sections |
4 ounces peeled grapefruit sections |
1/3 cup crumbled feta |
Instructions
- Make the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, salt and pepper.
- Prepare the salad: In a large bowl, combine kale, orange, grapefruit, and feta. Drizzle with dressing and toss until well-coated.
