FLIK or Treat: "Bloody" Beet & Lemon Shrub
If you're looking for something fun to get you in the Halloween spirit, try making this "Bloody" Beet & Lemon Shrub.
A shrub is a non-alcoholic syrup made from fruits or vegetables, sugar, and vinegar. Traditionally, these tangy, acidic, sweet concentrated syrups are topped with seltzer and served on ice as a perfectly refreshing beverage. Add in your favorite spirit -- a splash of vodka or gin -- to enjoy it as a cocktail.
Our recipe calls for the vinegar mixture to sit for a few days, so plan ahead if you want to enjoy this creepy cocktail on All Hallows Eve!
For a spooky twist on this shrub, don't forget to add in ghoulish details like eyeballs, ears, or fingers for the perfect Halloween beverage.
Beet and Lemon Shrub
Refreshing and tart, this Beet & Lemon Shrub takes a few days of advance work to make, but is entirely worth it. Great as a non-alcoholic mocktail or add a splash of vodka for a ghoulish cocktail.
Ingredients
7 oz fresh red beets |
1/2 cup apple cider vinegar |
1/2 cup sugar, granulated |
1/2 tsp kosher salt |
Fresh mint |
1 oz lemon juice |
12 oz seltzer |
Instructions
1. Peel and dice the beets.
2. Combine the beets, apple cider vinegar, sugar, and salt into a blender and blend until pureed. Cover and refrigerate for 3 days.
AFTER THREE DAYS
3. Strain the mixture through a fine mesh strainer.
4. Stir in lemon juice into the syrup.
5. In a tall glass, pour 2 fl. oz of shrub syrup and 2 fl. oz. of seltzer, top with ice. Garnish with a mint leaf (and a few bloody body parts).
