Granny’s Coconut Pies
Hold on to your hats, this recipe makes 48 delicious Mini Coconut Pies!

Ingredients
2 sticks butter |
6 oz. cream cheese (not whipped) |
2 c. flour |
3 eggs, beaten |
1 1/2 c. sugar |
1/2 c. butter |
4 tsp. lemon juice |
1 tsp. vanilla |
1 c. coconut |
Instructions
For the Crust:
- Blend 2 sticks butter & 6 oz cream cheese.
- Work in 2 cups flour.
- Refrigerate several hours.
For the Filling:
- Combine 3 beaten eggs, 1.5 cups sugar .5 cup melted butter, 4 tsp lemon juice, and 1 tsp vanilla.
- Add coconut.
- Press dough into miniature muffin tins, spoon in filling.
- Bake at 350 for 35-40 minutes until golden brown.
