Citrus, Avocado, Cilantro Dressing
Avocado in the blender is a salad dressing game changer. The healthy, unsaturated fats whip up to create a oh-so-creamy, emulsified dressing without dairy or mayo, and allow you to use less oil. Toss this simple dressing on shredded cabbage for an easy slaw, or in place of ranch on a traditional taco style salad.
Citrus, Avocado, Cilantro Dressing

Makes 8 servings
Ingredients
3 oz avocado, diced |
1 TBSP cilantro, fresh |
3 TBSP lime juice |
1 tsp. garlic, minced |
1/4 tsp. salt |
1/4 tsp. black pepper |
1 TBSP olive oil |
1/3 cup orange juice |
Instructions
1. Blend all ingredients in a high speed blender, or with an immersion blender.
2. Store leftover dressing in an air-tight container in the refrigerator for up to 3 days.
