Parmesan Chicken, Balsamic Tomatoes
It’s a good thing there are more than 4,000 varieties of tomatoes in this world because there are more than 4,000 applications for them, for sure! We’re sharing two of our favorites this month as tribute to August’s functional food.
This twist on chicken parm is even better than the original, trust us. Our recipe for Parmesan Chicken, Balsamic Tomatoes is baked – not pan-fried – but it’s light coating keeps the chicken breast juicy on the inside and adds a healthy dose of salty parmesan cheese. A fresh tomato topping and balsamic drizzle keep this dish summery and light.
We’ll share another new tomato recipe soon, but in the meantime, help yourself to these tomato-containing FLIK favorites: Caprese Stuffed Avocado; Chicken Caesar Freekeh Salad; and Local Corn, Pepper, Tomato Saute.
