You thought the holidays were over? Think again! January is National Oatmeal Month and your FLIK wellness team is down to celebrate any food holiday -- especially when we can put a nutritious spin on it. Enter Overnight Oats. 

There's a reason that overnight oats have become so trendy lately. To the point, they are simple and quick. Our overnight oats recipe base is almost a 2:1 ratio of oats to milk, refrigerated overnight. And while we're sharing our recipe for Orange Vanilla Overnight Oats, know that we're totally cool if you skip the compote (although you'll be sorry!) and go even simpler with mix-ins like fresh or dried fruits, nuts or nut butters, seeds, or even savory toppings.

Orange Vanilla Overnight Oats Ingredients

Our recipe for Orange Vanilla Overnight Oats also starts simply. Once your oats are in the refrigerator, spend an extra 15 minutes preparing the compote. 

I love the warmth of the orange vanilla compote. Seasonal citrus, caramelized to enhance its natural flavor. The subtle sweet and spicy notes of cloves. The delicious aroma floating through the hallways while fresh oranges simmer on the stove. Feel free to taste the orange vanilla compote, spooning a bite right out of the saucepan. But fair warning: It's a slippery slope. You might have a difficult time stopping. 

Pro tip: Consider doubling the recipe and use half your compote at breakfast and half at suppertime. Orange vanilla compote would also pair well with savory dishes like bone-in chicken or roasted pork loin. 

Orange Vanilla Compote

Chill down your compote and in the morning, throw together your breakfast parfait. A cup of overnight oats, a few spoonfuls of compote, and a large dollop of Greek yogurt. Layer it all in a plastic container or glass jar and head out the door!

Orange Vanilla Overnight Oats Recipe

Orange Vanilla Overnight Oats

Orange Vanilla Overnight Oats are a citrusy, seasonal take on this trendy and nutritious breakfast. We use star anise or cloves to add some warmth to this bright recipe. 


Ingredients

3 cups skim or non-dairy milk
5 3/4 cups old fashioned oatmeal, dry
1 cup water
1 cup orange juice
1 cup granulated sugar
1 teaspoon pure vanilla extract
6 each whole cloves or star anise
2 teaspoons orange zest
3 pounds (about 8 medium) orange, peeled and sectioned
1 cup plain nonfat Greek yogurt

Instructions

  1. In a bowl, combine oats and milk, cover and refrigerate. Allow oats to soak overnight, not more than 15 hours.
  2. Combine water, orange juice, sugar, vanilla, cloves and orange zest in a saucepan. Bring to a boil.
  3. Dice oranges and add to saucepan. Cook uncovered, until tender (about 15 minutes). Remove cloves. Cool.
  4. In a small bowl or glass jar (at least 12 fluid ounces) layer the following: 1 cup prepared overnight oats, ¼ cup orange vanilla compote, 2 tablespoons greek yogurt. 

Makes 8 Orange Vanilla Overnight Oat Parfaits. Nutrition per serving: 330 calories, 4 g fat, 0.5 g saturated fat, 50 mg sodium, 63 g carbs, 26 g sugar, 7 g fiber, 13 g protein
